All Dressed Up With Nowhere to Meet Mickey

We had one of those super gloomy days that practically begged us to stay home, eat hot soup, drink tea or hot chocolate, and binge-watch the Twilight movies. You know, the kind of day where being cozy is the entire plan.

Did we do that? Of course not.

Instead, we decided to go to LBX in Long Beach to take pictures with Mickey and Minnie. Because apparently, we enjoy making plans and watching the universe laugh in our faces.

The event ended up getting “rained out.” And by rained out, I mean it sprinkled. SPRINKLED. There was barely any rain, but okay.

We decided to grab some food and hoped that by the time we finished eating, they might have everything set up again. Spoiler alert: They did not. Then, the second it started sprinkling again, I said, “Hell no,” and we left.

I do feel a little bad for all the kiddos who showed up in their costumes, excited to meet Mickey and Minnie, only for the event to get canceled. I know there were probably some very disappointed little faces that day, and that part genuinely makes me sad.

BUT! I did make soup when we got home, so the entire day wasn’t a bust. I managed to salvage at least one part of my original gloomy-day vision.

Now, guys. GUYS.

I tried making a soup recipe my mom gave me, and I’m convinced recipes passed down by our mothers are actually just elaborate trust exercises because WHAT DO YOU MEAN THIS IS ALL YOU GAVE ME?

The ingredient list was:

  • 1 whole onion
  • 2 jalapeños
  • Chicken thighs
  • 8 cups of chicken broth
  • White rice
  • Seasonings

THAT’S IT.

No measurements for the seasonings. No instructions. No explanation of how much rice to use. Just vibes, chicken, and a prayer.

And somehow, I’m supposed to turn this into soup.

I love my mom, but apparently, the ability to make her recipes is a family heirloom that I have not yet unlocked. Meanwhile, I’m standing in my kitchen trying to recreate a soup based on what amounts to a grocery list and a dream.

Anyway, the soup got made, the weather remained disrespectful, and Mickey and Minnie will have to wait for another day.

Next time, I’m staying home with my hot chocolate and Twilight marathon. At least Edward Cullen isn’t going to cancel on me because of a sprinkle.
